I really like this recipe!!!!!! It is pretty quick and tastes great.
Think juicy skirt steak (or any steak, really—chicken works too!) marinated in a zesty mix of lime, cilantro, garlic, onions, cumin, and a pinch of salt. Slap it on a screaming-hot grill for 2-3 minutes per side (skirt steak’s quick!), and boom—tender, drool-worthy meat ready for tacos, burritos, or nachos galore. Pair it with Mexican rice, tortillas, grilled jalapeños, and a cold cerveza for that authentic vibe. Perfect for Easter, summer BBQs, or any excuse to gorge with family. Leftovers? Tacos for days!
Quick Recipe (4 servings):
- 2 lb skirt steak
- Juice of 2 limes
- ½ cup cilantro
- 4 minced garlic cloves
- ½ cup chopped green onions
- 2 tbsp olive oil
- ½ tsp salt
- 1 tsp cumin
Mix marinade, submerge the steak or put it all in a plastic bag, chill 30 min (a couple hours for max flavor). Get the grill HOT first. Skirt steak: cook on each side for about 2 to 3 minutes Flank steak should cook on each side for 8-10 minutes. Dont over cook! Good with rice and bean.
